Needing Sunshine, Finding Lemons, Making Cake . . .

I’m sequestered with a pile of research papers, in between forays out to attend meetings. Little time for blogging, sadly, but I remember promising to share the simple, delicious recipe I found online for a Lemon Cornmeal cake. In fact, since I can’t ethically copy the recipe here, I’ll just send you over to thesource at YumSugar. The only change I made is adding finely chopped fresh rosemary to the batter, inspired by a marvellous and much richer Lemon Cornmeal Cake we’d enjoyed earlier at a friend’s. The friend was kind enough to scan and send along to me his recipe, taken from the pages of Tom’s Big Dinners, a cookbook I’m putting on my Want list. But that version has a 1/2 cup of butter AND 2/3 cup mascarpone AND 1/4 cup heavy cream AND 4 eggs! No wonder it tasted so damn good.

The version I made was easily mixed together with a healthy 2 eggs, cup of buttermilk, and just over 1/4 cup of olive oil — still a very tasty treat. Let me know if you try it!

    Lemon and cornmeal – a delicious-sounding combination. Lemon is one of our favorite flavors at Pondside.

    I do love a good lemon cake, so I'll have to give this one a try sometime soon. I hope the grading goes quickly. I just got through one stack of papers last night, but I still have another to go before finals start coming in on Monday.

    The texture must be good with the addition of the cornmeal.

      It's perfect for potlucking — yummy, but quick to pull together, generally from ingredients already in the cupboards (and I suppose you could pluck the lemons from your little tree!)
